Vermicelli spinach and chicken recipe

Vermicelli and orzo pasta with spinach, chicken, onions and cheese; an easy yet delicious recipe which will surely impress any guest!

Servings: 3-4


250g chicken breast cubes, with salt & pepper

100g spinach, finely chopped

1 cup of vermicelli

1/2 cup of orzo

1 onion, chopped

2 garlic cloves, crushed

1/4 cup cooking cream

3/4 cup milk

1 tsp dry coriander

1/4 tsp black pepper

1 chicken or vegetable stock cube

1/2 cup mozzarella cheese

1/2 tbsp butter

Vegetable oil

Salt/pepper


1) Half-cook the vermicelli and orzo in boiling water, drain and set aside

2) Heat butter and vegetable oil in a pot; cook the onion and garlic until they soften then add the chicken cubes

3) Once the chicken is cooked add the spinach, coriander, black pepper, milk and cooking cream then mix in the vermicelli and orzo

4) Melt the chicken stock cube in 3 tbsp of hot water; add to the mixture then mix in the mozzarella

5) Stir all ingredients together for ~2 mins then serve and enjoy!
