Baked Moroccan chicken breast recipe

Chicken breast marinated in a spice mix of turmeric, cumin and fresh parsley then baked on a bed of chopped onions- this easy, flavorful recipe will definitely top your favorites list!! Best enjoyed with a side of couscous or salad

 

Prep time: 20 mins

Cooking time: 25 mins

Serves: 4


Chicken ingredients:


600gr chicken breast

1 tbsp fresh parsley, chopped

2 tbsp green olives, chopped

2 cloves of garlic, minced

1/2 tsp turmeric

1/4 tsp chili powder

1/2 tsp cumin

1/4 juice of lemon

1 tbsp butter

Drizzle of olive oil

Salt pepper


Onion mix:


1 onion, chopped

Vegetable oil

Salt and pepper


  1. Place all chicken ingredients in a bowl; mix well & marinate for 30min-24hrs if possible to allow the flavors to get absorbed

  2. Pre-heat the oven to 200C

  3. On an oven tray place a baking sheet, add the onion mix and place the marinated chicken on the bed of onions

  4. Bake for 20-25mins at 200C until the chicken is cooked

  5. Serve with a side of couscous or salad!
